This months flavor focus is the illustrious and mysterious phenomenon of smoke. Fire and smoke are so fundamental to our history of cooking, and the flavors of smokey food permeate every great culinary tradition worldwide. From roasting and charring to the updated techniques of cold smoking. Chef Cat will use he essence of the tradition that can best be summed up as comforting, familiar, and warm.
I. Alder smoked castlevetrano olive, Marcona almonds, Macadamia chèvre stuffed pickled sweet peppedew peppers and Brown sugar carrot bacon
II. Terra Flora assorted age cheeses (truffle whipped cashew, farmhouse almond with herbs de Provence), House aged mustard, House smoked kraut and compotes and crackers
III. Palate Clenser, Carbonated Dragon Fruit Spheres, Yuzu syrup, and Mint
IV. Rosemary “butter” torched House sourdough, Carmelized shallot jam, Hickory smoked cashew cheddar, Sweet earth foods bacon, and Pickled Raddish
V. Sweet potato pancake puffs, Maple powdered Sugar, Candied pecans, House Smoked orange blossom water frozen yogurt, and Nutella Cream
